Really, how dangerous is it to eat raw meat?

We have a garden every year, and every year we shoot the groundhogs and eat them. But I got to thinking, groundhogs eat nothing but vegetation. If there are no visible signs of sickness on the animal, honestly, how high is the risk of getting sick from eating the meat raw? I'd like to know, because vegetables are the most nutritious when eaten raw. I am pretty sure that heat also destroys nutrients in meat. Educated answers, please. Thanks.
